Trattoria Laghi Verdi
Ingredients and quantities

Quantities for 4 people:

  • 2kg catfish
  • superfine white flour
  • sliced lemon
  • sunflower seed oil for frying

Preparation method:

Clean and gut the catfish, then wash it under cold, running water. Drain and dry it using kitchen paper. Cut the fish into pieces, following its natural shape, and toss in the flour.
Bring the oil to boiling temperature ready for frying. Fry the fish until it turns golden brown. Use a slotted spoon to remove the fish from the oil and place on kitchen paper to drain. Dry well before adding plenty of salt. Place on a warm dish surrounded by slices of lemon. Serve and enjoy, preferably using your hands.
