Grandma’s tagliatelle (with meat sauce)

Type of recipe: First courses



Quantities for 6 people:

For the pasta

  • 500g flour
  • 6 eggs

For the sauce

  • 500g minced beef
  • 1 sausage
  • 1 onion
  • 1 carrot
  • 1 stick celery
  • 200g tomato concentrate
  • extra-virgin olive oil
  • salt and pepper

Preparation method:

For the pasta
Mix the flour and water together on a wooden chopping board. Allow the dough to rest for about 30 minutes. Roll out the pasta using a rolling pin, then leave to dry for 60 minutes. Roll the pasta up on itself and cut into strips.

For the sauce
Chop the celery, carrot and onion and brown for about 10 minutes. Add the beef and crumbled sausage and brown for a further 10 minutes. Add the tomato concentrate, a little salt and pepper to taste and some water. Cook the meat sauce over a low heat for about 5 - 6 hours.
