The tavern is in the heart of the old town, in premises that two centuries ago were the stables of the Countess of Hannover, lover of the Duke of Modena. At the time, a tomato street market was held in the small square opposite, where customers now have lunch in summer under a gazebo. The tavern is in the heart of the old town, in premises that two centuries ago were the stables of the Countess of Hannover, lover of the Duke of Modena. At the time, a tomato street market was held in the small square opposite, where customers now have lunch in summer under a gazebo. In the kitchen, the chef Massimiliano Telloli and his collaborators prepare creative dishes using the traditional products of the territory, like Parmigiano Reggiano cheese made from Bianca Modenese milk and balsamic vinegar. A good selection of vegetarian and gluten-free dishes is also served. There is also a good selection of quality cold cuts (traditional Bolognese mortadella) from the provinces of Emilia-Romagna and cheeses made from unpasteurised milk, supplied exclusively by small Italian producers, including Parmigiano Reggiano matured 24/36 months and its “tosone” (trimmings from the cheese before it is put in brine). The menu changes often, although the main ingredients remain the same, and cakes and desserts are always homemade by the kitchen staff. All fruit and vegetables are seasonal and include “Bologna” potatoes, whilst the choice of meat includes Samoggia spring chicken, white veal of the Apennines PGI, rabbit, duck and pigeon from regional farmers, Bianca Modenese beef tartare and organic suckling pork from Modena. To savour and accompany dishes, the restaurant has a wine list with over 600 labels. <<<
