Quantities for 4 people:

  • 1.2 kg beef
  • 2 carrots
  • 3 sticks celery
  • 3 white onions
  • 1 glass red wine
  • 2 medium ladlefuls meat stock
  • extra-virgin olive oil
  • tomato sauce
  • sage, rosemary, bay leaves, salt

Preparation method:

Roughly chop the vegetables and sweat down in a saucepan with a little oil.

Pour a drop of oil and the herbs in a separate roasting pan and brown the meat over a lively heat until golden on all sides. Season and roast in the oven for about 15 minutes, basting with the red wine.

Remove the meat from the oven and add, with the vegetables, to its cooking juices, after filtering. Add the tomatoes and stock until the meat is covered (about two ladlefuls). Cover and cook for about 1½ hours, then turn the meat and cook for another 1½ hours over a low heat.

When cooked, drain the meat, put the vegetables through a vegetable mill and serve with the sliced braised meat.
