Ingredients and quantities

Quantities for 8 people:

  • 1 litre fresh milk
  • 6 eggs
  • 100g Originario rice
  • 250g sugar
  • 100g candied citron
  • 150g peeled whole almonds
  • 100g almond biscuits
  • 00g bitter almond liqueur

Rice cake

Preparation method:

Cook the rice in the milk (when cooked the milk should be almost totally absorbed), then add the sugar and set aside to cool.

Beat the eggs and mix in the almonds, chopped fairly coarsely, the diced candied citron, the crumbled almond biscuits and half the bitter almond liqueur. Add the mixture to the rice and mix together well.

Butter a baking tin that can contain a cake that is 3/4 centimetres thick. Bake in the oven at 170°C for 40 minutes. Cool and soak with the remaining liqueur, making some small holes in the cake with a toothpick.
