Quantities for 10 people:

  • 300g unpeeled almonds, coarsely chopped
  • 300g flour
  • 200g sugar
  • 200g butter
  • 2 egg yolks
  • 1 sachet of vanillin
  • rind of 1 lemon
Accompanying wines:
Sweet Malvasia

Preparation method:

Put the flour, sugar and almonds on a pastry board and make a well in the centre. Add the eggs, softened butter, vanillin and lemon rind. The butter should be soft enough for it not to crumble and so that it is easy to mix in. Knead well and then use the mixture to line a baking tin, but crumble up into small mounds. Cook in the oven at 160°C for 40-50 minutes.
