Located in the ancient stables of the Sforzesca Fortress, the restaurant has been run by the Preti family since 1977. The old horse paddocks can still be seen in the indoor dining room, whilst the large windows onto the veranda offer splendid views of the fortress. The cuisine respects the wholesome culinary traditions of the territory and all recipes rely on top-quality fresh, seasonal ingredients. Guests can enjoy delicious local cheeses and cold cuts served with homemade piadina or fried flatbreads, first courses made using homemade and hand-rolled fresh pasta, an excellent choice of grilled meats, which acquire all the flavour of the wood ash and homemade desserts, cakes, tarts and biscuits. As well as traditional dishes, the restaurant also serves innovative dishes inspired by the colours and fragrances of the season. These include chicken seasoned with balsamic vinegar, vegetable pie with Parmesan sauce, potato tortelli, bigoli pasta with cured pork cheek, cherry tomatoes and shallots, barley soup with leek and potato, tortellini in capon broth, thinly-sliced beef with Taggiasche olives and cherry tomatoes, fillet of beef with Porcini mushrooms on a bread crust and roast suckling-pork ribs, as well as desserts such as mascarpone cream, ricotta cassata and baked cream. The restaurant has a rich menu and a wine list, selected in collaboration with the Regional Wine Cellar of Emilia Romagna. <<<
