Trattoria di Via Serra is located in the Bolognina district of Bologna. After their successful ten-year stint at Osteria del Sole in Zocca, Tommaso and Flavio decided to open new premises in Bologna - a small restaurant with about 35 covers, set out in three comfortable rooms that have been tastefully renovated and furnished with wood on the floors and walls. They still work with their devoted collaborators - Olga and Margherita - who followed them into the city, and the small mountain producers who supply their ingredients. “With good stuff, you make good stuff” is the popular saying that has always inspired Tommaso and Flavio, who always choose the best produce, such as butter and ricotta, mascarpone, Tosone and Parmesan cheeses made using milk from the Bianca Modenese breed (in fact, they are involved in a project to save the breed), organic meats and cold cuts and potatoes from Castel d’Aiano. All pasta and fried flatbreads are made using organic flours, including stoneground Marzotto soft wheat flour, wholemeal flour, corn flour and chestnut flour. When in season, white, Marzuolo and Scorzone truffles are served. The genuine and wholesome dishes prepared are the simple and traditional dishes typical of the Apennines between Bologna and Modena. <<<
