At the foot of a splendid hillside on which stands the Castle of Bianello, residence of Matilde of Canossa, in 1936 Maddalena Burani opened a general food store with an adjacent inn, now the La Maddalena Hotel and Restaurant. In the early 1950s, the premises were taken over by her son Ero and the restaurant became popular with city dwellers that came to eat typical local dishes like erbazzo . . . >>>

In the early 1950s, the premises were taken over by her son Ero and the restaurant became popular with city dwellers that came to eat typical local dishes like erbazzone (savoury pie), rice pie, local cold cuts and rabbit in fricassee. Today his sons, Emilio and Emiliano, serve dishes that represent the pride of local gastronomy and delicious variations, perfected by the chefs, always using wholesome recipes that have been handed down from generation to generation. Specialities include truffles and mushrooms when in season, boiled meats, game and cappello da prete (braised shoulder of beef). All first courses are handmade and include cappelletti in capon broth, Savoy cabbage and pheasant tortelli and maltagliati (pasta shapes) with roe deer. Here customers can still savour the dishes and flavours of yesteryear. <<<
