Baked cream

Preparation method:
Whisk the egg yolks with the sugar and vanillin, incorporate the fresh cream and mix well. Pour the mixture into individual moulds or into a dish. Bake in the oven in a bain-marie at 170°C for 30 minutes. When cooked, set aside to cool. Sprinkle with the brown sugar and sear until the sugar caramelizes. Dish up and serve.
