Ingredients and quantities

Quantities for 4 people:

  • 500ml milk
  • 4 whole eggs
  • 1 egg yolk
  • 150g sugar
  • ½ glass rum
  • 4 tablespoons Alkermes or Rosolio liqueur

Baked milk pudding

Preparation method:

Mix all the ingredients, except the liqueur, together in a bowl. Filter the milk pudding through a strainer into a non-stick baking tray until it is about 3cm deep. Set aside 3 glasses of the mixture. Cook in the oven in a bain-marie for about 45 minutes at 130°C. Add the Alkermes liqueur to the mixture set aside to turn it a nice purple colour. When the milk pudding is cooked, add the Alkermes mixture on top, distributing it well over the entire surface. Return to the oven for another 20 minutes at 130°C. The milk pudding should look like a perfectly dry, two-tone pudding. Portion the pudding into small cubes and serve on a large dish, garnishing with fresh whipped cream, strawberries and strawberry topping.
