Trattoria dai Mugnai
Ingredients and quantities

Ingredients for 6 people:

  • 1kg golden Parma onions
  • 180g sausage per person
  • 700g fresh red tomatoes (in winter, use peeled tomatoes prepared the previous summer)
  • 150g Parma ham PDO (cut into 3 slices, with a little of its rind)
  • 3tbsp wine vinegar
  • 2tbsp Brisighella extra-virgin olive oil PDO
  • Cervia salt
  • pepper

Sparkling Barbera DOC Colli Bolognesi

Bolognese friggione with sausage

Preparation method:

Finely slice the ham using a sharp knife. Place in a non-stick frying pan with some oil and heat. Add the sliced onion and cook over a high flame (it should turn crispy). When it becomes transparent, add the tomatoes. Cook over a high flame until all the water has evaporated. Add the vinegar and turn off after 2 minutes.
Grill the sausages and serve with the warm friggione. Alternatively, serve with roast polenta.
