Ingredients and quantities

Quantities for 8 people:

  • ½kg chicken livers
  • 150g salted capers, approx.
  • white wine vinegar
  • extra-virgin olive oil
  • Tuscan-style bread

Preparation method:

Put the salted capers to soak in the white wine vinegar overnight. Brown the chicken livers in a little oil. Drain and crush the capers and lightly sauté in another pan. Chop up the livers and sauté with the capers. Allow to boil for 20-30 minutes to obtain a well amalgamated mixture. Toast the slices of bread and spread with the mixture, adding a drizzle of oil. Serve.
