Cold cuts and burtleina (fritters)

Preparation method:
Place the flour in a bowl and stir in some water to obtain a soft batter. Season lightly with salt and allow to rest for about ½ hour.
Pour the batter, a little at a time, into a frying pan filled with boiling olive oil or lard to form small fritters. Remove when crispy and golden, taking care to dry the fritters well with kitchen paper. Serve the fritters with the assorted cold cuts.
