Ingredients and quantities

Quantities for 8 people:

  • 800g apples
  • 50g sugar
  • 150g white flour
  • 150g milk
  • 2 eggs
  • 1 lemon
  • 1 sachet baking powder
  • 2tbsp icing sugar (optional)
  • pinch of cinnamon powder
  • pinch of salt

Ferrara-style apple cake

Preparation method:

Put the eggs, sugar and a pinch of salt in a mixer and blend until uniform and creamy. Add the flour, baking powder, cinnamon and milk a little at a time. Pour the mixture into a bowl. Peel the apples and remove the cores. Cut into quarters and then in to thin slice and soak with the lemon juice so they do not turn brown. Add the slices of apple to the cake mixture and stir in well, adding a drop of warm milk. Line a 22 cm cake tin with baking paper, pour in the cake mixture and smooth out the top. Cook in a hot oven at 180°C for about 40 minutes. Allow to cool for 5 minutes. Turn out onto a dish and serve either warm or cold, sprinkling with some icing sugar if required.
