Ingredients and quantities

Quantities for 4 people:

  • 2 egg whites
  • 100ml fresh cream
  • 50g squacquerone cheese
  • salt

For the fondue

  • 50g grated Fossa cheese
  • 70ml milk
  • a tablespoon of flour
  • a knob of butter
  • pinch of salt


Flan on a Fossa cheese fondue

Preparation method:

Whisk the egg whites, squacquerone cheese and cream. Steam the mixture obtained for about an hour at 85°C.

Prepare the fondue by melting the butter in a small pan, subsequently adding the sieved flour. Remove from the heat and add the milk and grated Fossa cheese, taking care to mix well. Return to the heat and cook until the sauce begins to boil and thicken. Add a pinch of salt. Bring to the boil and thicken.

Serve the flan cold with the cheese fondue.
