Fried courgette flowers stuffed with mozzarella

Preparation method:
Remove the pistils and stalks from the flowers. Cut the mozzarella into thin slices. Stuff the flowers with the slices of mozzarella then toss them, in turn, in the flour, the beaten egg with added grated Parmesan cheese and then the breadcrumbs. Repeat the three steps one more time. Fry the breaded flowers in plenty of groundnut oil, drain and dab with kitchen paper to remove any excess oil. Serve immediately.
