Ingredients and quantities

Quantities for 4 people:

  • 4 veal cheeks
  • 2 beef cheeks
  • 2 glasses water
  • 1 stick celery
  • 1 carrot
  • 1 onion
  • 3 glasses red wine (Barbera di Montebudello)
  • seasoning for stock

Ganassino: veal cheek cooked in Barbera di Montebudello wine

Type of recipe: Main courses

Preparation method:

Add salt and seasoning for stock to some water and boil the cheeks for about 1½ hours. Drain and place them in an oven dish with the celery, carrot and onion. Add the red wine and cook in an oven heated to 180°C for about 1½ hours. Season with salt and serve.
