Ganassino: veal cheek cooked in Barbera di Montebudello wine

Preparation method:
Add salt and seasoning for stock to some water and boil the cheeks for about 1½ hours. Drain and place them in an oven dish with the celery, carrot and onion. Add the red wine and cook in an oven heated to 180°C for about 1½ hours. Season with salt and serve.
