Green apple semifreddo

Preparation method:
Core the apples and blend them in their skins until smooth. Add the sugar and lemon. In a separate bowl, whisk the cream and egg white, add the blended apple and mix together well. Spread the mixture onto a baking tray and chill in the freezer for about 2 hours.
To make the syrup, boil the water, sugar, lemon and apple juice together in a pan. Cut the apple into thin slices and soak in the syrup for a few minutes. Drain, place on a baking tray and dry in the oven. Cook the sugar with the butter, wine, apple juice and lemon juice to obtain a syrup. Add the apple cut into small cubes, the pine nuts and the sultanas and caramelize.
Cut the semifreddo into slices and arrange on a dish, alternating with the dried apples and a small amount of caramelized apple.
