In the upper Marecchia Valley, a treasure trove of environmental, tourist and food and wine delights, is the Locanda dell’Ambra, obtained following renovation work carried out on Talamello Castle. The rooms, situated on various floors of the building, boast natural stone walls and old oak beams. They provide an elegant setting for savouring Fossa cheese and local cured cold cuts. To discover the history and processing of these products, it is possible to visit the ditches in which the cheese is matured (in fact, fossa means ditch) and the cellar where cold cuts are hung. The owners, Maurizio and Daniela, put great passion and skill into the delicious recipes they make with the products the Marecchia valley and Montefeltro di Talamello area offer. Squacquerone flan on a Fossa cheese fondue, cream of Porcini mushroom soup, pumpkin and Fossa cheese-filled ravioli, gnocchi on a bed of fondue and black truffle and scortichino (thinly-sliced beef) with balsamic vinegar, Fossa cheese and rocket are just some of the dishes on the menu. The desserts, all homemade, are also worth trying and the wine list offers top quality labels. Customers can also stay in the inn’s delightful rooms. <<<
