Preparation method:
For the passatelli: on a chopping board mix together the breadcrumbs and grated Parmesan cheese, then add the eggs, butter, salt and flour. Knead together to form a ball and cool in the fridge for 15 minutes. Then make passatelli use the special utensil.
For the broth: bring the water to a boil in a pan and add the vegetables, meat and salt. Boil the broth for about 4 hours, skimming off any impurities and adding water if it evaporates significantly.
Cook the passatelli in the boiling broth; they are ready to serve when they come to the surface.
