Preparation method:
In a pan, sauté the chopped onion with the oil then add the chopped celery and carrot. Pour in the white wine and reduce. Add the minced horse meat and sauté for a few minutes, then add a glass of water and the double tomato concentrate. Add a pinch of sugar if necessary, to reduce any acidity. Season with salt (a teaspoon) and cook for about 2 hours.
