Polenta with wild boar stew

Preparation method:
Dice the wild boar and place in a bowl. Add the marinade ingredients, ensuring that the red wine covers the meat. Leave for 24 hours.
Drain the meat and put in a pan over a lively heat so it loses its water content. In another pan, sauté some chopped onion, celery and carrot in a little oil. When golden, add the wild boar, tomato purée, vegetable stock, cinnamon, bay leaves and juniper berries and season with salt to taste. Cook for about 2 hours and serve with lots of polenta.
