Taking the road that leads from Calderino to Mongiardino, in the lush green heart of the Apennines surrounding Bologna is the Nuova Roma, housed in a renovated old farmhouse. In a rustic, yet classical and elegant setting, sisters Nanni, Marinella and Patrizia carry on this family business, which has now been handed down for four generations, with great love and passion serving traditional local cuisine. Patrizia, who works in the kitchen with her staff (who are all women), also buys all the ingredients, favouring locally-sourced, seasonal produce. All the pasta is homemade and is hand-rolled. Traditional dishes include tortellini, only ever served in broth, gramigna pasta with sausage sauce and skewered pork livers wrapped in netting, which are served alongside seasonal vegetables, mushrooms and truffles, all fresh and locally-sourced. In the dining room, Marinella works alongside her son Omar, a sommelier and great connoisseur of spirits. The wine list has over 700 labels - including 80 champagnes - and a selection of regional wines. Also worth mentioning is the fine list of spirits. At Nuova Roma guests can even stop for a quick snack of fried flatbread and premium cold cuts, served on the large veranda in summer. <<<
