Ingredients and quantities

Quantities for 4 people:

  • 1kg tripe
  • glass white wine
  • 2 bay leaves
  • 6 cloves
  • 1 glass tomato sauce
  • 1 onion
  • 1 carrot
  • 1 stick celery
  • water
  • 1 clove garlic
  • salt and pepper

Romagna-style tripe

Preparation method:

Wash the tripe and boil, preferably in a terracotta pan. Chop the onion, carrot, celery and garlic and add to the boiled tripe after cutting it into strips. Add the bay leaves, cloves and a glass of white wine. Then add the tomato sauce, salt and pepper and as much water as is necessary. Simmer for about two hours. Serve piping hot.
