Soft almond biscuits typical of Spilamberto

Preparation method:
Finely chop the almonds. Whisk the egg whites until stiff, add the caster sugar and finally, the almonds. Mix delicately.
Heat
the oven to 190°C and place lots of spoonfuls of the mixture on a
baking tray lined with baking paper, ensuring there is sufficient
distance between them to allow for raising.
Cook for about 15 minutes, cool and remove carefully as the almond biscuits are very crumbly.
