Ingredients and quantities

Quantities for 2 people:

  • 12 Adriatic squill fish
  • 10 baby date tomatoes
  • salt
  • extra-virgin olive oil
  • 1 organic lemon
Accompanying wines:
Ravenna IGT Bianco

Steamed squill fish

Type of recipe: Appetizers

Preparation method:

Rinse the squill fish under cold running water and drain. Put them in a steam oven and cook for 12 minutes at 100°C. If you do not have a steam oven, bring a pan of salted water to the boil, add the fish and boil for 10 minutes.

When cooked, fillet the squill fish: cut the legs and remove the eyes using a pair of scissors, snip the shell at the bottom and along both sides. Then cut above the tail and fully open out the shell. At this point, it is possible to remove just the flesh.

Clean and wash the date tomatoes and dress in a vinaigrette of oil, lemon juice and salt.
