Preparation method:
Trim off any excess fat from around the fillets and cut into 8 medallions. Wrap the medallions with the slices of lard and season with the finely chopped herbs. At this point, heat a grill and cook the lard-wrapped medallions on it for about 6 minutes on each side. Only season with salt just before serving.
