It took someone born and bred in Fidenza to bring one of the most characteristic trattorias in Parma back to life; it is situated in a charming part of the city, at the beginning of Via Varese where the Baganza Torrent has just merged into the Parma River, opposite the last spontaneous wood in the city and a short distance from the old town centre. Federico Ghiozzi – descendant of a family with 50 years’ experience in the field (his mother and sister still run the legendary “Al Duomo” in Fidenza) – has a number of trades behind him and the innate artistic verve the whole family boasts (his brother is TV star Gene Gnocchi), which has made him one of the “new, classical singer-songwriters”. Five years ago he decided to re- open the premises which, in recent years, had even been a Chinese restaurant. Today, it has the air of a traditional local trattoria which, as well as a menu of traditional recipes, guarantees select ingredients, along with a warm welcome that makes everyone feel at home. All dishes are freshly made based on the experience of Parma-born chef Roberto Poletti; an excellent interpreter of the trattoria’s gastronomic specialities. It is not a “fashion” place, but a friendly, cosy restaurant. For this reason, as Federico underlines, the customers change constantly yet at the same time are loyal and often return. The Belvedere serves a selection of quality local and national wines made by small producers who still retain a certain originality and peculiarity, whilst offering excellent value-for-money. Well worth trying is the beef, which comes exclusively from the San Giorgio farm in Pellegrino Parmense, owned by Federico’s brother, Alberto. <<<
