Situated on the small square in the old town centre of Fognano, just a few kilometres from Brisighella, the ancient mediaeval and thermal spa town in the Lamone Valley, Trattoria Cheterena is a family-run business: Marco Costa runs the kitchen and his wife Loretta manages the dining room. Service is friendly and the dishes carefully prepared and the result of years of experience. Sliced fillet of beef dressed with Brisighella oil, fried Porcini mushrooms and the original dish of fried potatoes skins are just some of the menu choices which also includes typical dishes such as liver-topped canapés, piadina and mixed platters, homemade and hand-rolled pasta, served in various ways using local produce, such as cappelletti with truffle, pappardelle with hare sauce, house tortelloni, tagliatelle and “curzul” pasta with shallots and pancetta. Main courses range from stewed wild boar and roe deer with polenta, to grilled meat, to sliced beef fillet, which is served with fresh Porcini mushrooms when in season, right through to T-bone steak and mutton. Homemade desserts vary during the week and include chocolate cake, chestnut pie and mascarpone cream. The wine list favours local labels, with the possibility to order draught wines or wines by the glass. In summer customers can enjoy lunch or dinner in the square outside, whilst in winter the place to be is the small dining room with open fireplace. <<<
