Ristorante La Ca’ di Mat
Ingredients and quantities

Quantities for 4 people:

  • 600g wild boar meat
  • 500g chopped tomatoes
  • 1 litre dry white wine
  • 2 white onions
  • 1 large carrot
  • 2 sticks celery
  • 4 cloves garlic
  • 1 sprig rosemary
  • 1 bunch sage leaves
  • curry, coriander, nutmeg, cinnamon
  • salt and black pepper
  • 1 meat stock cube

For the polenta 

  • 1 litre water
  • 2tbsp extra-virgin olive oil
  • 300g coarse maize flour
  • salt

Wild boar with polenta

Preparation method:

Cut the wild boar meat into 3 cm cubes. Chop the vegetables (onion, carrot, celery, garlic, rosemary and sage) and brown in a saucepan with the olive oil. Add the diced wild boar and brown. Season and add a stock cube and some mixed spices, such as black pepper, curry, coriander, nutmeg and cinnamon. Pour over abundant dry white wine. Reduce the wine by half before adding the chopped tomatoes. Cook over a low heat for about 1 hour and serve with grilled polenta.
