Wild chicory salad with crispy pancetta and balsamic vinegar

Preparation method:
Clean the chicory and remove the roots, wash thoroughly and dry. In the meantime, cut the pancetta into strips and fry in a pan until delicious and crispy. Add salt to taste. Sprinkle the crispy pancetta strips over the chicory and serve with a drizzle of balsamic vinegar.
