Ingredients and quantities

Quantities for 4 people:

  • 500g milk
  • 5 egg yolks
  • 30g “00” flour
  • 1 vanilla pod
  • 110g sugar
  • 12 lady finger biscuits
  • 50g cocoa powder
  • 100g plain chocolate
  • 100g Alkermes liqueur
  • 50g Sassolino liqueur

Preparation method:

Cut the vanilla pod in half and place in a saucepan with the milk. Bring to the boil. Mix together the egg, sugar and flour and add to the milk. Return to the heat and bring to the boil before turning off the heat. Divide the cream in half and add the cocoa powder and chocolate to one half.

Combine the Alkermes and Sassolino liqueurs. Cut the lady finger biscuits in half and soak in the liqueur mixture. Use the biscuits to line a mould or dish. Layer the vanilla custard and chocolate custard, ending with a layer of biscuits. Chill in the fridge for a few hours.

To serve, put the zuppa inglese in the centre of a dish and garnish with confectioner’s custard.
